This mug cake is AMAZING! Is a bit more on the decadent side, but I tried it for breakfast and it was amazing. This mug cake is SUPER peanut butter-y and gooey from the chocolate chips. You definitely have to try it out!
PEANUT BUTTER & CHOCOLATE MUG CAKE
Serves 1
Ingredients:
3 TBSP Flour of Choice
1-2 TBSP Vegan Chocolate Chips
1 TBSP Ground Flax Seed
1 TBSP Peanut Butter of Choice
1/4 tsp Baking Soda
Pinch of Salt
Approximately 5 TBSP of Water
Method:
1. Add the flour, flax seed, baking soda and salt into a microwave safe mug.
2. Add in the water, you may need to add more. The mixture should be the consistency of cookie dough.
3. Add in the chocolate chips and mix them in well, and then place in the microwave for 2-3 minutes. As each microwave is different, you may need to add more or less time onto the cooking. A good way of checking is to poke a fork or skewer into the centre of the mug cake, and make sure it is firm.
So that is it! This recipe is one of the easiest, and thats what makes it so delicious! You can add on toppings, such as extra peanut butter or fresh fruit - or just eat it as is. This one is definitely one of my favourites! (Coming from a extreme peanut butter addict)
