I've been super into raw desserts at the moment, and have been experimenting with what kind of stuff I can make! The other day I was craving a bounty bar, as they are one of my favourite chocolate bars - SO not only did I create a vegan version, but also a RAW VEGAN version! So without a do - here are my raw vegan bounty slices:
RAW BOUNTY SLICES
Serves: 6-12 Slices (Depending on how large your slices are)
INGREDIENTS:
1 Cup Medjool Dates (Pitted and soaked)
1 Cup Muesli
1/2 Cup Raw Almonds
1/3 Cup Full Fat Coconut Cream (for topping)
1 TBSP Carob Powder
1 TBSP Cacao Powder
Splash of date water
METHOD:
1. Soak the 1 cup of dates in hot water for a minimum of 8 minutes, once soaked put them into. a high speed blender (or food processor) with a splash of the date water.
2. Add the almonds, muesli, carob powder, cacao powder and blend until fully combined. It should be a sort of cookie dough texture.
3. Press into a brownie tray or a food container, and make sure the top is as smooth as possible. Place in a freezer for 10 minutes.
4. After 10 minutes, take the tray/container out and pour the coconut cream onto to the top of the mixture and smooth out. Freeze for 2 hours minimum before eating! Cut the solid mixture into slices of your choice!
These slices are SUPER delicious and so easy to make. I hope you try them out!
