Vegan Sugar Cookies

I promised you guys Christmas recipes and I delivered! I made these vegan sugar cookies and they are SO BOMB. I am so glad the recipe worked out as I was nervous it wouldn't, with having to use vegan substitutes for everything!


These cookies are perfect for snacking on Christmas day, or to give for friends as homemade gifts! Anyway, without a do here they are :)

VEGAN SUGAR COOKIES

Serves Approximately 16-18


Ingredients:

2 Cups Self-Raising Flour

2/3 Cup Sugar of Choice (I recommend refined white sugar)

1/3 Cup Vegan Margarine*

5 TBSP Approximately of Almond Milk

1 tsp Vanilla Extract

1/4 tsp Almond Essence

Pinch of Salt

Extra flour for Cookie Cutting


For the Icing (Optional)*:

1 Cup Confectionary Sugar

2-3 TBSP of Water


Method:

1. Sift the flour into a large mixing bowl.

2. Add in the sugar, salt and margarine into the bowl and mix well, then add in the almond essence and vanilla extract. From here add the almond milk, and keep mixing to see if you need to add a bit more. The final result for the batter should be a mouldable dough.

3. Wrap the batter with cling wrap, or to be more more environmentally friendly - roll into a large ball and place in a container (the mixture won't dry out, it will actually get more 'wet'). Place in the fridge for minimum of 2 hours.

4. Once cooled, take out the mixture. Preheat the oven to 180C or 350F. Line a baking tray. Sprinkle flour onto a large clean surface and take a third of mixture with your hands, and roll into a ball.

5. Place the ball onto the floured surface, and roll with a floured roller for a desired thinness of around 1-2cm.

6. Using a cookie cutter, cut into your desired shape.

7. Place the cookies onto your lined baking tray, about 8-10cm apart. Depending on the size of your cookie, you will probably be able to fit 12 on one tray.

8. Bake for 8-15 minutes. The baking time depends on how thick or thin your cookies are, so keep that in mind. Thinner cookies will take around 8 minutes while thicker can take up to 15-20 minutes. You are looking for a lightly golden brown colour! Once finished baking, allow to fully cool before icing.

9. At this point you can eat them (they are very flavourful and sweet not their own) or ice them!


NOTES


*I used Nuttelex, you can use softened vegan stick butter as well - but keep in mind I didn't try that, so the consistency may change.


*I used a basic icing only for the photo, but you can spruce up the icing by adding food dyes.

These are seriously so good and definitely recommend trying them!
